Brown sugar and cinnamon are one of my favorite combinations for making a basic iced coffee taste like something I ordered at a coffee shop.
I already liked regular brown sugar cold foam, but adding cinnamon completely changes the flavor. It tastes warmer, richer, and a little closer to those Starbucks drinks that feel cozy even when they’re iced.
This brown sugar cinnamon cold foam recipe has the same creamy texture you get at Starbucks, but you can make it at home in a few minutes with simple ingredients.

I especially like it on cold brew because the cinnamon flavor stands out against stronger coffee. It also works on iced chai, shaken espresso, or even iced matcha if you want something different.
Once I started making this at home, it quickly became one of those recipes I kept going back to during late summer and fall.
Why This Cold Foam Works So Well

The combination of brown sugar and cinnamon gives this cold foam a deeper flavor than classic vanilla sweet cream cold foam.
The brown sugar adds a caramel-like sweetness while the cinnamon gives it a warm coffeehouse flavor that reminds me a little of cinnamon cereal milk or cinnamon rolls.
The heavy cream helps create that thick Starbucks-style texture while the milk keeps it smooth and pourable instead of turning into whipped cream.
A small pinch of salt also helps balance the sweetness and brings out the cinnamon flavor more.
One thing I really like about this recipe is that it works with so many drinks. You can pour it over:
- cold brew
- iced lattes
- shaken espresso
- iced chai
- iced coffee
- iced matcha
It feels like one of those small upgrades that makes homemade coffee taste more expensive.
Ingredients You’ll Need
- Heavy Cream: This is what creates the creamy texture Starbucks-style cold foam is known for. I would not skip it unless you are making a dairy-free version.
- Milk: I usually use 2% milk because it keeps the foam smooth without making it too heavy. Whole milk also works well.
- Brown Sugar Syrup: You can use homemade brown sugar syrup or store-bought syrup. Dark brown sugar syrup gives the foam a deeper flavor that works especially well with cinnamon.
- Ground Cinnamon: The cinnamon is what separates this recipe from regular brown sugar foam. I recommend mixing some into the foam itself instead of only sprinkling it on top.
- Vanilla Extract: A little vanilla rounds everything out and makes the flavor taste more like a Starbucks copycat.
- Pinch of Salt: This sounds tiny, but it really helps the flavors stand out.

Best Coffee Drinks To Pair With Brown Sugar Cinnamon Cold Foam
- Cold Brew: This is my favorite option because strong cold brew balances the sweetness of the foam really well.
- Iced Brown Sugar Shaken Espresso: The cinnamon flavor fits naturally with the brown sugar espresso combination.
- Iced Chai Latte: If you like chai drinks, this cold foam tastes amazing on top because the cinnamon blends right into the spices already in the chai.
- Iced Vanilla Latte: A simple vanilla latte becomes much more interesting with cinnamon cold foam on top.
- Pumpkin Drinks: Once fall starts, this cold foam works really well on pumpkin coffee drinks too.
How To Make Brown Sugar Cinnamon Cold Foam
Step 1: Add the ingredients to a glass
Pour the following into a tall glass or cold foam pitcher:
- 3 tbsp heavy cream
- 2 tbsp milk
- 1 tablespoon brown sugar syrup
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- pinch of salt
I like using a tall container because it helps the frother work better without splashing.
Step 2: Froth the mixture

Use a handheld milk frother and froth for about 20 to 30 seconds.
The texture should look creamy and slightly thick while still being pourable. If it starts looking like whipped cream, you’ve gone too far.
Step 3: Prepare your drink
Fill a glass with ice and pour in your coffee or espresso drink.
Cold brew works especially well here because the bold flavor balances the sweetness of the foam.
Step 4: Pour the cold foam on top

Slowly pour the brown sugar cinnamon cold foam over the iced drink.
The foam will naturally float toward the top while mixing slightly into the coffee underneath.
Step 5: Finish with cinnamon
Sprinkle extra cinnamon over the top if you want a stronger flavor and a more coffee-shop look.
Tips for the Best Brown Sugar Cinnamon Cold Foam

- Use Dark Brown Sugar Syrup: Dark brown sugar has more molasses flavor, which makes the cold foam taste richer.
- Don’t Over-Froth: Cold foam should stay smooth and pourable. If it becomes stiff, it will sit on top like whipped cream instead of blending into the drink.
- Chill The Ingredients First: Cold ingredients froth better and create a thicker foam.
- Pair It With Strong Coffee: This foam tastes best with cold brew or espresso drinks because lighter coffee can get overpowered by the sweetness.
- Add Cinnamon Into The Foam: A lot of people only dust cinnamon on top, but mixing it directly into the foam gives much more flavor.
Substitutions and Variations

Make It Dairy-Free
You can use:
- oat milk creamer
- dairy-free heavy cream alternatives
- barista oat milk
The foam will not be quite as thick, but it still works.
Don’t Have Brown Sugar Syrup?
Dissolve 1 tablespoon of brown sugar in about 1 teaspoon of warm water, let it cool, and use it instead.
I prefer brown sugar syrup because it blends into the cold foam more smoothly, but this works when you want to make the recipe without preparing syrup first.
Add Pumpkin Spice
A little pumpkin spice seasoning turns this into a fall-style cold foam without needing pumpkin puree.
Make It Sweeter
Add another tablespoon of syrup if you like sweeter Starbucks-style drinks.

Common Mistakes To Avoid
- Using Warm Ingredients: Warm cream does not froth properly and creates thinner foam.
- Blending Too Long: The foam should stay silky, not become whipped cream.
- Adding Too Much Cinnamon: Too much cinnamon can overpower the drink and create a dry texture in the foam.
- Using Weak Coffee: A stronger coffee base helps balance the sweetness.
How To Store Extra Cold Foam
This cold foam is best fresh, but you can keep leftovers in the refrigerator for about 24 hours.
Before using again, froth it briefly to bring the texture back.
I would not make it too far ahead because the foam texture slowly separates over time.
