For one drink, I use 1 tablespoon in the cold brew. This gives the coffee noticeable sweetness and marshmallow flavor without completely covering the coffee.
The same syrup is also added to the cold foam.
You can use store-bought toasted marshmallow syrup or homemade syrup.
Regular marshmallow syrup can also work, although toasted marshmallow syrup gives the drink a deeper flavor that better matches classic s’mores.
Heavy Cream and 2% Milk
For the marshmallow cold foam, I use heavy cream and 2% milk.
The heavy cream creates richness and helps the foam thicken, while the milk keeps it light enough to pour over the coffee.
Note: Using heavy cream alone creates a much heavier topping that is closer to softly whipped cream.
For the best results, both ingredients should be very cold before frothing.
Milk Chocolate Sauce
Milk chocolate is the classic choice for s’mores, so a milk chocolate sauce works particularly well here.
You can drizzle the chocolate around the inside of the glass, over the cold foam, or both. I prefer adding some chocolate to the glass and finishing the drink with a small drizzle over the foam.
A little goes a long way. The goal is to add chocolate flavor without covering the toasted marshmallow flavor.
Graham Cracker Crumbs
The graham cracker crumbs are the final part of the s’mores combination.
Crush the graham crackers into relatively fine crumbs before sprinkling them over the cold foam. Large pieces are harder to drink and can quickly sink through the foam.
You only need about a teaspoon for one drink.
How to Make S’mores Cold Brew
This S’mores Cold Brew recipe is easy to assemble, but the order of the steps matters.
Step 1: Make the Marshmallow Cold Foam

Add 3 tablespoons of cold heavy cream, 2 tablespoons of cold 2% milk, and 1 tablespoon of toasted marshmallow syrup to a small glass or measuring cup.
Use a handheld milk frother to froth the mixture until it becomes creamy and thick but is still pourable.
This usually takes around 20 to 30 seconds, although the exact time depends on the strength of your frother.
Pay attention to the consistency rather than frothing for an exact number of seconds. You want the cold foam to sit on top of the coffee while still being fluid enough to slowly sink into the drink.
Pro tip: If you froth it too long and the mixture becomes too thick, add a small splash of milk and gently stir it in.
Set the finished marshmallow cold foam aside while you prepare the cold brew.
Step 2: Sweeten the Cold Brew

Pour 10 ounces of cold brew coffee into the glass.
Add 1 tablespoon of toasted marshmallow syrup and stir thoroughly until the syrup is evenly mixed into the coffee.

If you prefer less-sweet coffee, start with 2 teaspoons of syrup in the cold brew. You’ll still get additional marshmallow flavor from the cold foam.
For a sweeter, more dessert-like drink, use 1½ tablespoons of toasted marshmallow syrup in the coffee and add a little more milk chocolate sauce.
I recommend tasting the coffee base before adding the foam. It should be slightly less sweet than you want the finished drink to be because the toppings will add more sweetness.
Ways to Customize Your S’mores Cold Brew

There are several easy ways to change this recipe while keeping the main s’mores flavor.
For a stronger chocolate flavor, add 1 to 2 teaspoons of milk chocolate sauce directly to the cold brew. Stir it in with the toasted marshmallow syrup before adding the ice.
You can also add more chocolate sauce around the inside of the glass for a richer drink.
For extra marshmallow flavor, add a little more toasted marshmallow syrup to the cold brew rather than increasing the syrup in the cold foam. Too much syrup can make the foam heavy and affect its texture.
If you prefer a creamier coffee base, add a small splash of milk directly to the cold brew before adding the foam.
You can also adjust the amount of graham cracker crumbs. A teaspoon gives the drink noticeable graham cracker flavor without overwhelming the cold foam.

Can You Make S’mores Cold Brew Ahead of Time?
The individual parts can be prepared ahead of time, but I recommend assembling the drink immediately before serving.
Cold brew is convenient for making ahead. Prepare your homemade cold brew in advance and keep it refrigerated, or use a ready-to-drink bottled version.
The heavy cream, milk, and toasted marshmallow syrup can be measured and mixed ahead of time. Store the mixture in a sealed container in the refrigerator and froth it when you’re ready to make your drink.
Graham crackers can also be crushed in advance. Keep the crumbs in an airtight container so they stay crisp.
Once everything is prepared, assembling the drink takes only a few minutes.
I don’t recommend storing an already assembled S’mores Cold Brew. The ice will dilute the coffee, the cold foam will lose its texture, and the graham cracker crumbs will become soft.
Tips for the Best S’mores Cold Brew

Use cold ingredients for both the coffee and cold foam. This keeps the drink colder and helps the foam reach a thicker consistency.
Stir the toasted marshmallow syrup into the cold brew before adding ice so it distributes evenly throughout the drink.
Don’t over-froth the marshmallow cold foam. Stop when it is thick and creamy but still easy to pour.
Use milk chocolate sauce rather than a very dark chocolate sauce if you want a more traditional s’mores flavor. Milk chocolate gives the drink a sweeter, creamier chocolate flavor.
