It’s light, fruity, and refreshing in a way that doesn’t feel heavy like some iced coffees do.

I’ve tried fresh strawberries, frozen ones, and freeze-dried strawberries, and freeze-dried works best if you want that slightly candy-like strawberry taste Starbucks has.

If you’re using freeze-dried strawberries, add a handful to a small saucepan with 1 cup of water and 2–3 tablespoons of sugar.

If you’re using fresh strawberries, chop about ½ cup and use the same method. Bring everything to a gentle simmer, not a full boil.

Let it cook for about 5–7 minutes until the strawberries break down and the liquid turns a deep pink-red.

Once it’s done, strain it through a fine mesh strainer so you’re left with a smooth syrup-like base. Let it cool completely before using. This step matters—warm liquid will melt your ice too fast and dilute everything.
